Ingredients
  • 1.5 lbs 93% lean ground turkey
  • 2 cups baby spinach, roughly chopped or frozen spinach
  • 1/3 cup jarred sun-dried tomatoes in oil, drained and chopped (reserve 1 tbsp oil)
  • 1 (15 oz) can cannellini beans, drained and rinsed
  • 1 tbsp reserved sun-dried tomato oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded parmesan (optional, omit for dairy-free)

Directions

  • Heat olive oil from the sun-dried tomato jar in a large skillet over medium-high. Brown turkey, breaking it up, 5–7 min.
  • Add Italian seasoning, garlic powder, and sun-dried tomatoes. Stir and cook 1–2 min until fragrant.
  • Add beans and spinach. Stir everything together and cook 3–4 min until spinach is warm and beans are heated through.
  • Season with salt & pepper. Top with parmesan if using. Serve directly from the pan.
  • Serve with: 90-sec brown rice or crusty high-fiber bread
