Salmon Baked in Tomato Sauce

6 (4.5 oz/130g each) salmon fillets
1 1/2 tbsp mixed herbs
1 1/2 tbsp lemon zest, divided
1/2 tsp salt
1/4 tsp black pepper
3 1/2 tbsp olive oil, total
21 oz (600g) canned chopped tomatoes
1 medium white onion, diced
1 tbsp garlic paste
3 tbsp capers
6 fl oz (180ml) chicken stock
1 1/2 tbsp tomato paste
1 tbsp oregano
1 1/2 tsp thyme
3 tbsp fresh parsley, chopped, for garnish
Preheat oven to 400°F. Rub salmon with salt, pepper, herbs, 1 1/2 tsp lemon zest, and 1 1/2 tsp olive oil.
Heat 1 1/2 tbsp olive oil in a 12-inch skillet over high heat. Sear salmon flesh-side down for 3 minutes. Remove from skillet.
Reduce heat to medium. Add 1 1/2 tbsp olive oil and sauté onion, garlic paste, and capers for 3 minutes.
Add chopped tomatoes, chicken stock, tomato paste, oregano, thyme, and remaining lemon zest. Simmer 8 to 10 minutes.
Pour sauce into a 9x13-inch baking dish. Add salmon and bake for 10 minutes, until salmon reaches 145°F.
Top with fresh parsley and serve.
