Strawberry Protein Mousse

INGREDIENTS (3 Servings)

  • 1 box (0.3 oz / 9g) sugar-free strawberry gelatin powder
  • 1/3 cup (80ml) boiling water (212°F)
  • 2 cups (480g) plain nonfat Greek yogurt
  • 1 scoop (30g) vanilla whey protein powder
  • 2 cups (300g) fresh strawberries, hulled, divided
  • 1/4 cup (40g) chia seeds
  • 1 tbsp (21g) honey
  • 1 pinch salt

DIRECTIONS

  • Whisk gelatin powder into the boiling water in a small bowl for 2 minutes, until fully dissolved.
  • Add yogurt, whey, 1 1/2 cups strawberries, chia seeds, honey, salt, and the gelatin mixture to a blender.
  • Blend on high for 60 to 90 seconds, until completely smooth.
  • Divide into three 8-oz jars or ramekins. Cover and refrigerate at least 3 hours, until set.
  • Slice the remaining 1/2 cup strawberries and top each mousse before serving.
