Ingredients
  • 4–5 fully cooked chicken sausage links, sliced ½-inch thick
  • 2½ cups baby Yukon Gold potatoes, halved (about 1 lb)
  • 1½ cups bell peppers, sliced into ¾-inch strips
  • 1 medium yellow onion, sliced into ½-inch strips
  • 2 tbsp avocado oil
  • Italian seasoning, to taste
Directions
  • Preheat oven to 400°F.

  • Toss all ingredients on a large rimmed baking sheet until evenly coated.

  • Spread in a single layer; do not overlap.

  • Roast 28 minutes, flipping once at 15 minutes, until potatoes are fork-tender.

  • Rest 2 minutes before serving.

Sheet pan meals have saved dinner in my house more nights than I can count as a busy mom.
