Ingredients
- 4–5 fully cooked chicken sausage links, sliced ½-inch thick
- 2½ cups baby Yukon Gold potatoes, halved (about 1 lb)
- 1½ cups bell peppers, sliced into ¾-inch strips
- 1 medium yellow onion, sliced into ½-inch strips
- 2 tbsp avocado oil
- Italian seasoning, to taste

Preheat oven to 400°F.

Toss all ingredients on a large rimmed baking sheet until evenly coated.

Spread in a single layer; do not overlap.

Roast 28 minutes, flipping once at 15 minutes, until potatoes are fork-tender.
